Bryanna,
I love your recipe, I think from the no-fat cookbook, for macaroni and cheese; it's the one that uses cooked potatoes, carrots and onions. I want to make it for my friend's daughter who is allergic to soy. Can you think of what I can substitute for the 1/2 cup tofu? (She's also allergic to dairy, wheat and corn.)

Sorry, she's also allergic to all nuts. Any other suggestions?
Can you imagine trying to cook for someone with all these allergies? It's so awful. She's already been to the hospital twice.

Bryanna, how about cooked white rice? Not the most nutritious, but would it work?
Vegan 1, How about coconut? Never heard of anyone allergic to it!

Yes-- thanks, Linda! You can use 1/2 cup of well-cooked rice instead of the tofu. Or you can just leave the tofu out and add a Tbs. or two of tahini (can she eat sesame seeds) for richness. ---------- "To look like a goddess, eat like a peasant." Karen Andres
