NeatBall problem

Hi Bryanna,

I´ve tried for the first time the NeatBalls recipe.
After letting the mixture rest for a few hours, when trying to roll the balls, all the soy protein granules where practically jumping off the mixture.

I can´t imagine what went wrong.

Maybe your Tvp granules are too large? You could try grinding them smaller pieces in a DRY food processor before soaking. (NOT too small-- you want some texture.)

Bryanna,

I wanted to respond to this thread, but wanted to find my posts regarding my neatballs experiences; but I spent about 20 minutes searching for it! Is there a way to search the board? Is there a search feature in the future? If it is an additional cost, it's not really a necessity; I just would like to search for certain past discussions and topics. It's amazing what info is on this board! Looking through the pages yields a lot; plus, many things have been covered already, and/or problems resolved!

They are quite small. When dry about 2 mm each side, but get quite bigger after being wet.
I will try to break in smaller pieces, in the next few days.

Leopoldo,

Are you using flakes or granules? I had this problem when making a beefy seitan of Bryanna's that called for bean flakes, but tvp granules or oats were listed as substitutes. I used tvp flakes instead of granules and it did the same thing -- fell apart! So I used granules and it came out fine.
The flakes get waaaay too big when soaked!

Hi Linda,

Thank you for posting the pictures.
I’ve used the TVP Granules. After wetting they simply popped off of the dough : (

I will try to break it a bit smaller to see if it holds together.

Hi leonardo. I recall making neetballs awhile ago and I think I know what you are talking about. I remember the TVP "jumping off". I had to take a small ball size portion off my mixture and really work it with my hand (squezing, shaping, etc), it eventually stayed together. Although I did not get every little peice of TVP as some fell off and some stayed in the bowl, I got the most and I had alot of nice looking little neetballs when it came time to used theoven dried out little balls. The little balls mke you think they aren't going to be appetizing, but follow one of Bryanna's uses for them and it will be awesome.

Again you just gotta flex the pects with this recipe... it'll work out. Have faith. :)

Hi Dori,

I’ve worked each ball, the way we usually work a bread dough, when making small breads.
I’ve tried to keep the granules inside, but as soon as the balls were worked, and the tvp got to the surface, they, unfortunately popped off.
Maybe the size of the tvp´s were not so small, I’ll try breaking them. Thanks.

Hmmmm...I think some falling out can be expected but no too-too much...I wonder if your gluten is the right kind! That's the only thing I can think...

Leopoldo, the only thing I can think of is that your gluten powder is different fromn ours here. Try using less of it so that the mixture is not so "springy".

I will try adding less gluten. (I did the exact opposite, adding more …)
