Having picked 24 lbs of blackberries on Thursday afternoon and wondering about how to use them, my OH thought it would be nice to have blackberry muffins. So I used Bryanna's Low-fat Fresh Apple Cinnamon Muffins recipe (from the Weekly Vegan Recipes Archive 3) and substituted blackberries for the chopped apple. I also left out the cinnamon and added the grated zest of one lemon, and didn't bother with the topping because I was in a hurry. I also used something called Supreme Sponge flour that I can get here in the UK as "pastry" flours as such are not available.
The lovely purple muffins were delicious! Most other muffin recipes are too high in fat and sugar, but these were just perfect. Next time I will add a topping for a nice bit of crunch.

Hi Bryanna, I was actually going to try that recipe, but I couldn't get onto that part of the site yesterday for some reason! But I will give those a try next time.
