I keep reading about these "brests" in the Chinese cookbook, but have no idea what it is...I've done some searching on google and can't seem to have any luck finding out what they are. Is it possible to still find these?

You can get them here:

They used to have what they called "brests', but now have "cutlets". You could also try these:

I bought the ones from healthy-eating.com. They are shaped like chicken breasts and good. I simmer them in water for about 25 minutes to make them soft. Squeeze the water out and then, I marinade them with sauce, etc. Native Foods at Costa Mesa uses these in their restaurant.

It says approx. 45 cutlets per 1/2 lb.

There is a picture in this site after it is breaded and fried.

For people in the UK, there is a great vegan chicken substitute available from a company in Milton Keynes (north of London):

I'm not sure how similar this is to the one available on the other side of the pond, but it has a very "meaty" texture and cooks great on the barbecue (especially with some smoked paprika mixed with olive oil brushed on)!

Veggie-world has TONS of vegetarian meat substitutes (most are vegan, and the ones that aren't are marked as such) and I highly recommend them. In fact, OH and I are going there soon to stock up on some products.
