I cooked a batch of your soy & seitan cutlets a few weeks ago and they turned out the greatest ever. We had them plain panfried with boiled potatoes and salad one day and as BBQ'ed Vietnamese saigon subs the next day. YUM YUM YUM!
Urged by the photo of your seitan steaks au poivre, I did a batch of seitan steaks yesterday (from your old basic recipe in Almost No-Fat Cookbook). I baked the steaks a little more than one hour and they turned extremely juicy and tasty. I panfried them with browned onions and added some of the cooking liquid to form a delicious sauce. This time I made panfried potato cubes with thyme and lemon as a sidedish together with a simple salad. It was a gourmet meal, very very rich-tasting. I've often been asked if I don't miss a steak as a vegetarian - if I ever did, I truly don't with something as good. Talk about having your cake and eat it too.
So I'm very much looking forward to your seitan e-book, Bryanna!
