Question about pressure cooker cooking

I just purchased my first pressure cooker (a Kuhn Rikon recommended by Debbie) and am interested in trying out all sorts of stuff. I made some lentil soup in it yesterday and it was yummy.

Does anyone use their pressure cookers a lot ? I mean, besides just cooking beans and soups ? I'm also going to try some of Bryanna's seitan recipes in the pressure cooker, but was wondering what else I could use it for.

Please don't do the seitan in a pressure cooker! Seitan needs slow cooking-- the pressure cooker seitan is a disaster!

I agree with Bryanna. I never pressure cook seitan. I did use the pressure cooker to reconstitute dry TVP slices and they became soft, softer than just soaking them with hot water. I made tvp slices for pho this way and like the result.

You can steam collard for only 5 minutes. You can cook brown rice for 25 minutes (but then let it sit for 15 minutes). You can make curries, Indian or Thai for shorter time and the magic is the spices absorbed to ingredients in curries instantly. So you don't have to simmer the curries for hours the way I used to cook curry conventionally.

I use my pressure cooker a lot, but usually for bean dishes - stews and so on, or grains. I also often do risotto in the pressure cooker. When I learned that technique, risotto replaced pasta as my last-minute-haven't-thought-about-dinner dinner. :) 15 minutes from walking into the kitchen to sitting down at the table.

I wish I'd bought the Kuhn Rikon - mine is still a safe model, but it's noisy. Small price to pay, though, IMO. :)

Thanks for the tips. I read somewhere about cooking seitan in a pressure cooker, I guess it wasn't on this message board! :)
