Yes, the irish moss is brown. And the cheese is not hard like a brick, but should be sliceable. When frozen, you can grate it easily.
As for time, you will get to that eventually. It took me about a year to change my "cooking mindset". I'm not big on menus and lists, unfortunately.
But why not go through my "Free recipe Archives", my blog recipes, and the newslettrs and choose the quick and easy recipes. Print them out and make a binder of them, divided into categories.
Do one more difficult recipe every week, so that you are continually learning. After a while, these new ingredients and cooking methods become second nature and you could write a shopping list in your head. But give yourself time to adjust.
You can rely more heavily on storebought meat subs, pasta, stir-fries, etc., now. Believe me, I don't take hours to cook every night!
Soups are good because you can make a pot and freeze portions for a quick meal.
