I'm new to this Vegan way just about 8 weeks now there was a class of 35 all with Cardiac and other health Issues. The book was just ok. Then I found Bryanna's Site Oh MY!!
So Much more interesting. But we still struggle with what ingr we are looking for all the time and where to find them etc. So the question of the day is. We made some of the cheeses and they are strong when we used the Miso ..this is how we did it bought the pkg type and used it dry ?? Is that what we are suppose to do or mix it up as a liquid?

Hi Bev! Nice to have a new "face" here in the forum.

You are so right about so many different, new types of foods and ingredients. But just you wait ... in 6 months or so, all this will be "old hat" to you!!

RE: miso. The only way I've ever seen it, or used it, is a thick, thick paste. Thick like peanut butter is thick. It comes (around here anyway) either in a plastic tub, like margarine, or in a plastic bag (which then you have to transfer to an airtight something.

It comes in a variety of colors from light to dark, which correspond to how strong its flavor is. I usually keep 2 or 3 varieties in my refrig all the time. It keeps like, forever.

I have never seen it in powdered form. Bryanna's recipes calling for miso, call for this thick paste form.

Welcome Bev! Where in Oregon do you live? There are several great stores in Oregon to find a lot of the ingredients that Bryanna calls for in her recipes.

Oh Thanks so much you guys! I found some in Medford Oregon called Westbrae Natural Organic Mellow White or Red Miso and it is in a paste. Good to know that Bryanna uses the paste thats what this is. Most of this class our choles where in the high 200-300 one man being in the 500's . I went down from 240 to 192 in 30 days eating mostly Bryanna's recipes. And dropped 22 ilbs in 8 weeks so I guess you could say we are all SUPER PUMPED in the class and I told everyone about Bryanna's website last night at an Alumni meeting. So expect alot of hits. To the graduation potluck because we brought 8 people we brought alot of food again Bryanna's food serving plates where empty. So to me I have found "GOLD" And can't begin to tell you how excited I am. BTW our hubbies (meat and potato) guys are eating this way to.

Wow! Very impressive Bev! Welcome to the forum. I am very pleased with your results of lowering your chol. Cooking vegan is better than taking choles. drug everyday for the rest of your life. You are enjoying the food too in the process of being healthy. Yes, in the beginning it is challenging to understand the ingredients but after a while you will get used to it and can teach others. We will help you in this forum so don't be shy of asking.

Bryanna's recipes are accurate and delicious. I agree that you have found GOLD. I found Bryanna's website from Weight Watchers in 2001 and has been actively using her recipe since then.
