Does anyone know where I can order carageenan from to make Bryanna's cheeses? Will it work without it?

Yes, it is necessary, I'm afraid. It's also called Irish moss powder. My HFS sells it.

I ordered it from that healthyvillage.com which is in Missouri. It is a lot, a whole bag. To make the 'cheese' I only need a little so I stored it in a glass jar in my cupboard. I am hoping that it will last a long time.

I'm sure it's better with carageenan, but I made it with double the amount of agar instead and it was still very good. Using carageenan and agar together improves the melting qualities.

It won't melt properly with just agar, though.

Thanks Bryanna. By the way, did you see yesterday's Vegan Lunch Box? Your cheese recipe was the highlight (made into kid friendly cheese sticks). So cute!!

The carrageenan really does make a huge difference. I have tried other recipes for vegan solid cheeses, and was most displeased with the results. In fact, I didn't even try Bryanna's recipes for the longest time since I'd had such a bad experience.

But I finally tried her cheddar for the first time a week or so ago, and LOVED it!! The texture is WONDERFUL!! And so very easy and quick to throw together!! Then this past week, I made the Gruyere, and LOVE it ... even more actually!! Just like she says, it's sliceable, and has a very pleasing texture (not rubbery, like my previous experiences had been).

Even tho I'm in the US, I ordered from The Shaman Shop (Bryanna had mentioned this as a souce for Canadian buyers). I had my order within several days I believe. I ordered one pound, which completely filled a one quart jar, and then some.

I had placed an order from Healthy Village; I don't know what happened, but the order never was processed. I never received it, and (thankfully) my CC was never charged.

But for anyone thinking about trying these cheeses, do give them a try!! I'll happy to send anyone who wants to try it a small package of carrageenan ... each recipe only needs 1 tsp., so I can send a small amount in a baggie via mail so you can try it without having to buy a whole pound.

Thanks Brenda. That was so nice of you to offer a sample. With your glowing recommendation, I think that I will go ahead today and order some Irish Moss. It's always great to read everyone's feedback here on the forum.

I have to laugh at ALL of the food and bulk ingredients I have in my kitchen. But it makes it so nice when I want to make something and I have all of the ingredients ready to go. We should all post pictures of our kitchens and pantrys.

I only support this idea if other people's pantries are as messy as mine! My poor kitchen cupboards are a jumble of bulk-store plastic bags filled with beans, grains, baking supplies, and all of these wacky ingredients like seaweeds. :) I keep saying I'm going to invest in some decent jars and containers, and really properly organize, but it never seems to happen. I can safely say that no one else would know which of the various bags of whitish powder was, say, cornstarch and which was egg replacer.

Krista, I think we're all in the same boat. When I moved last year, I tried to organize all the bulk stuff in glass crocks and wide-mouth canning jars. It works for the most part, except that now I don't have anymore room for jars. So I still wind up with bags. I think we all should definitely post some pictures.

OK, I'm ordering the irish moss powder NOW so I can finally try the new cheese recipes.

Which one should I start on? I'm really craving some sharp vermont cheddar (I used to eat the white kind).

Steph,

They're both so easy to whip up, you'll easily be able to do both the same day. Ours disappears pretty fast, and even with just two of us, we eat it up quickly!! Plus, Bryanna says you can freeze it ... I've never had any last long enough to do that.
