Bryanna, your spinach pizza topping

from 20 Minutes to Dinner was the sleeper hit of the year with my two year old. I used it to make a spanikopita of sorts (with regular shortcrust pastry, since I had some made and I was in a hurry) and it turned out just beautifully. I was beside myself with excitement when she ate two pieces in one sitting - I don't think I've ever seen her excited about leafy greens before. :)

So, now I'm trying to think of some other similar mixtures that I could use to fill a pie crust, and I wonder if anyone else might have any suggestions. She's a big tofu fan (as are we all in this house), so I'm thinking maybe a pesto and sun-dried tomato based pie would be lovely. Or maybe a layer of tofu mixture and a layer of grilled veggies...

It was delicious, in any case! Thanks for helping get veggies into my kid. ;)

Try the "Quiche Pizza" (I call it "Quizza"!) on p. 104-105 of 20 Minutes for more veggie ideas!

She might like the "Three-Sisters" Pizza topping too! It's in Vol. 3, Issue 2 Oct-Nov-Dec. 2005

You know, I could have sworn Bryanna had a recipe for a sundried tomato-pesto-ish type pie recipe....

but anyway, I did a quick look through my vegan feast folders and found a few that you might be able to work with, with some tweaking perhaps:

Vol 1, Issue 1, September 2003

Recipe for wine-marinated dried tomatoes

"Creamy tomato-Mushroom sauce" (using dried tomatoes and silken tofu) not sure you could use this for a firm filling,but it might make a nice pot-pie type creamy filling? Add some basil?

Maybe even the "Turkish Potatoes baked with tomatoes, peppers and herbs," could be used. Add some tofu cubes and basil and put in a crust ?

Vol 1 Issue 2 - Oct-Nov 2003:
Not a pie, but the ROASTED VEGETABLE AND SUNDRIED TOMATO STUFFING
she might like.

Oh, and the TIMBALLO DI POLENTA -- I've always wanted to make this!! This uses sundried tomatoes in oil; you could use unsweetened, watered-down cranberry juice for the wine, maybe, for your daughter?

Vol 1, Issue 3 - Dec 2003:
No sun-tomatoes, but tofu: maybe you can make the BREAST OF TOFU in the bernaise sauce In Puff Pastry Shells into a pie instead of individual wrappings; though your daughter might like the little shells or packets!

"Souffle roulade with spinach filling and cheese sauce" - you can u se some sun-tomatoes and basil?

Another pie, different, is "Chicken tortilla pie," she might like, you can use tofu.

Vol 3 Issue 1:
"Breast of tofu with Italian style roasted corn and tomato relish" for a filling?


Also, the new vegan feast, Ap-May-June 2006 has "Fresh tofu with sundried tomatoes, artichokes, and kalamata olives"! This sounds yummy in a pastry puff, phyllo ?

I didn't look through them all. It may be worth it to spend some time perusing all the Vegan Feast Newsletters! You may also want to look through the free recipe archives; I'm sure there's a ton of stuff there you may like. Even Bryanna's pesto, tossed with some tofu cubes would be delicious in phyllo packets.
