Yesterday I made the easter dinner for earth day! OMG this was the yummiest vegan thing I've had in a while! THANK YOU! The seitan finally came out after using the right ingredient! :)
I absolutely love mole. I haven't had it since going vegan, so this was a really nice dish for me. I made little tortilla wraps with all the ingredients! mmmmm.
I really really loved the seitan. My BF, who used to be a big meat eater, thinks it has a funny after taste. (Though he thought the texture was excellent.) Any ideas on what this is? I can't taste it so I'm not sure what he means. The only time he has had seitan and liked it is at the Candle Cafe in NYC, which from their cookbook I know they marinate in ridiculous amounts of oil. I would like to make this healthy at home for him. Maybe try a different flavor of seitan?

You might like to try the "pork tenderloin", which has a very mild taste (and would be good with the mole). The recipe is in the jan/Feb?mar 06 issue, the last one (just leave off the crust, if you like). ---------- "To look like a goddess, eat like a peasant." Karen Andres
