I read the new newsletter. Nice, Bryanna! I want to try the drunken beans and mole. I have powdered chipotle now instead of the canned one. Can I substitute 1 tbsp per 2 chipotle chilies?

Another question, what if I pressure cook the drunken beans? Would it work or slow cooking is preferred?

I've never used powdered chipotle. I found this conversion in a recipe online, so it might be a good one to start with:

2-3 canned chipotle chilis or 1 tbsp chiptotle powder

You can add more chipotle than I called for , if you like (I know you like hot foods!). I'm sure this would work well in a pressure cooker, Debbie.

Debbie, please let me know if you make the drunken beans in the pressure cooker. I would love to make them that way as well.

Yes, we do like hot and spicy. I used 1 tablespoon chipotle powder for the 'chorizo' recipe and it was just right for us. Thanks for the tip.

That Mexican dinner is also one I want to try out, but I don't have a slow cooker - in fact, neither slow nor pressure cookers are used over here - can I alter the drunken beans recipe, using cooked beans? I made the vegan cassoulette the other day - which was very delish! - and have a lot of cooked pinto beans in the freezer.

Yes, I think you could make this with cooked beans--maybe a little less broth?-- and just cook it for an hour or 2 on the stovetop. According to americanbean.org, 1 1/2 lbs. dry beans= about 9 cups cooked beans.
