Ingredients in Denmark - (Soren are you there?)

Hi Soren,

Several ingredients that are called in Bryanna’s recipes (like nutritional yeast) are, unfortunately, impossible to find in Brazil where I live.
My brother that lives in Denmark is coming to visit us, and I would like to ask him to bring some of these products.
Can you help me with some addresses and contacts on where to buy them ?

Thanks,

Leopoldo

Just in case he's not reading this, Leopoldo, I'll write to him and ask him to email you.

Hi Leopoldo,

funny coincidence that you have a brother living here. Does he live in Copenhagen? That's obviously the best place to get your stuff. If he does, some of the best Health Food Shops to visit are:

City Helse (near Nørreport Station) in Vendersgade

Urtehuset, Østerbrogade 35, by Trianglen

Purefood, Blågårdsgade 33, on Nørrebro

You can get nutritional yeast flakes but they're overpriced - you get a bulk of 180 gram (6 oz) for (what equals) $10.

If you want him to bring you a selection of Chinese mock meats, I'd recommend he visit Chinatown on the corner of Rewentlowsgade and Stampesgade, just by the Central Station. They have mock duck, curried mock chicken, and mock abalone, all of which are stables in my kitchen. I wouldn't recommend the other mock meats there, I tried some mock meatballs which were horrible so stick to those three. They're cheap too.

The Danish company Nutana has some fine canned products although they look like they're stuck in the 70s if you're judging by the design :-) "Nuttolene" is a sort of peanut "meat" which may be very fatty but is delicate in thin slices. It doesn't seem to be available in the US but it is in the UK. They have some good "meat" balls as well although they contain egg white as do their sausages which are not that great.

Let me know if that's helpful or if you want me to be more specific. Most larger cities have a health food store with a reasonable selection of stuff so it shouldn't be too difficult a task for him. Vital wheat gluten for seitan making is very hard to find here, I did see it last time I went to Purefood but they didn't have a lot in stock.

Feel free to get back to me if you have other questions.

Cheers, Søren bs-sj@tdcadsl.dk

Hi Soren,

Actually he lives in Allerod, but I´m sure he is able to get to these Copenhagen stores.
Thanks for your quick answer. I will send him these infos, and I´ll let you know about my adventures with the new ingredients.

Regards,

Leopoldo

Hi Leopold,

glad it was helpful. After all, Allerød is only half an hour by train from Copenhagen. Which ingredients besides nutritional yeast are you looking for?
