Debbie, I was looking at Indian cookbooks on amazon and found these. I don't know how good they are, but you can read the reviews....

If your library has it (it's out of print), you might be interested in the Moghul Microwave. The cookbook isn't entirely vegan, but it does have some vegan recipes and some easily veganizable recipes, and some of the microwave techniques significantly reduce the fat in dishes. One of my Indian friends recommended it, so I think it's reasonably authentic :)

Thanks, Kourtney! What Debbie is interested in is really low-fat Indian food (me, too!), so that she can stay on Weight Watchers, but have exciting, spicy food at the same time! Unfortunately, traditional Indian food, even vegan, can be very oily. I was interested to see so many books addressing this. Wow Bryanna! Thanks for all the suggestions. I will have to investigate if my library has them.
Yes, to explain to all: I am going to learn to cook Indian dishes because going out to eat Indian Vegan is easy in my area but the restaurants are preparing those dishes loaded with fat. My husband's favorite cuisine is also Indian and that's the cuisine that I prepare the least (almost none). So I guess it's time for me to explore and challenge myself. I also love Indonesian dishes which are also loaded with fat (usually have coconut milk in it or deep fried). So it is another challenge for me to reduce the fat in coconut but still has somewhat authentic taste.
