I know the muffin recipe says not to substitute regular whole wheat flour, but I was wondering whether you thought I could substitute white pastry flour and regular whole wheat flour for the whole wheat pastry flour and regular flour. If so, should I use 2 cups white pastry flour and 1 1/2 cups whole wheat flour?

Yes, you could try that. It should work. The advantage to using ww pastry flour is that you can find organic ww pastry flour and organic unbleached flour, if that's important to you. it's very difficult to find organic white pastry flour-- Diamond Organics is the only place I could find it online: http://diamondorganics.com/ShowView/prod_detail_list/38 ---------- "To look like a goddess, eat like a peasant." Bob's Red Mill has it too. It's the only place I've been able to find it, thanks to Debbie's.
