Cooking barley

I just made a "pot" of barley in my oven. I have never done this before. I am impressed, I always thought the barley would be mushy (because it is used as a thickener and I don't like mushy so I never cooked it before, but it is not). My recipe called for 2 C barley, 7 C broth, and 1 1/3 C chopped dried fruit (apricots and golden raisins). I baked it uncovered at 325 for 1 1/4 hours. I like it alot and am sure that I will be making barley again soon.

Are there other ways I can make this... like in the rice maker or slow cooker? Any good barley recipes to share.

Actually, there will be more than one. Do you have my fiber cookbook, Dori? There is one of my favorite soups, Barley-Mushroom, in it. If you don't have it, let me know and i'll post it.

I add barley in all kind of soups. I also add quinoa in soups such as the WW zero points vegetable soup.

Yes, I have the fiber cookbook.

I have made the barley-mushroom soup. I knew barley could be used in soups. The thing that turned me off from doing anything different with it was the fact the soups would turn into gel when refrigerated, sure when warmed again and water added they would be okay. I thought that sticky / gummy was property of the barley, so i never tried to cook it in a pilaf fashion before. And I love soups, but the family allows me soup about 2 x weekly without taking very small portions (1/4 C servings) leaving me the rest of the pot to eat. They are eating the barley pilaf like a rice dish... a little slower than I hoped for the amount I made, but I might freeze some so I don't burn them out on it.

Since I realized that I could enjoy barley in ways other than soup (because I ran out of brown rice), now I can begin to use the 5# bag of pearled barley that I have had around for more than a year.

I will look more into the fiber cookbook and thanks for the suggestions!

I've added quinoa to one soup, in place of macaroni in Bryanna's lentil stew. Is the ww vegetable soup (0 points even with quinoa - WOW!) like Bryanna's ALL VEGETABLE SOUP, I just made a big pot of this this week to use up a large head of cabbage I bought.

I'm not directly aware of food allergies (like my son), but I am very certain I have food sensitivites. I've tried quinoa / corn pasta... I get a very sudden sharp cramps that last for an hour or two each and every time I eat this, but it doesn't happen when I add quinoa to lentil stew. I also have digetional upset when I try to add quinoa flour (that which I have milled) to muffins.

Also, speaking of ww, Debbie - - - how are you doing? I have lost 7 pounds in four weeks without exercising. I just started doing Leslie Samsone's two mile walk away the pounds and was able to enjoy some unusually nice weather. I decided my biggest goal right now was to keep healthy choices around... My downfall between August and December was busy-itis. I started filling up on bars and ready cooked stuff because I was taking classes on campus and had and 8 hour week drive to get there in addition to class work. I still have classes, but not the drive this time.
