vegan mashed potatoes

Any hints for making smooth, fluffy vegan mashed taters? I added Silk soymilk and Earth Balance. The taste was great but the texture was less than appealing: i.e., lumpy, gloppy, and definitely not suitable for company . . . Thanks! Catherine

What kind of potatoes did you use? Also, I wonder if maybe you added too much soy milk.

Starchy potatoes are best, although I'll admit that I'll make mashed potatoes out of just about anything. I peel them, cut them in chunks and boil them in salted water until they're quite tender. Drain them, and put them back on the stove with no lid to steam off some of the water. Mash them until most of the chunks are gone, then mash in some margarine, soy milk, salt and pepper. I like unsweetened soy milk for mashed potatoes, but it's all to taste.

You can also choose to use a hand mixer to make extra-smooth potatoes, just don't use a food processor or you'll end up with glue.

Ditto for what Kourtney said-- use Russet or baking potatoes, or Yukon Golds. Make sure they are good a dry when you mash them, and DON'T use a mixer or food processor! Mash with a potato masher while they are plain-- then, when they are pretty smooth, start adding the soymilk and use a sturdy wooden spoon to beat in the milk. you don't need lots. I never add margarine, just a little salt. You can use some blended silken tofu and soymilk (or tofu creme cheese, if you like), or tofu sour creme, for a rich taste, or cook some peeled garlic cloves in with the potatoes. They get mellow-tasting when cooked and mash smoothly. Other additions that add flavor without fat are roasted garlic, caramelized onions, and cooking the potatoes in a good veggie broth (chicken-style) instead of water-- you won't need to add salt, in that case.

Thanks for all the tips for cooking potato. I am not great in cooking potatoes but I am getting better. YES, I have done that LOL! Beating mashed potato with a food processor or a mixer. IT WAS A MESS! The mashed potato became gluey.
Boy, did I learn! Never again and now I use the good old manual potato masher.

BTW, Bryanna, I made your Stuffed potato from Fiber for Life cookbook with kale and mushrooms. They were yummy!
