Laurel's Kitchen Bread Book (2003 ed.)

Hi, I'm looking for some good, vegan whole wheat bread recipes. Does anyone know if Laurel's Kitchen Bread Book (2003 ed.) is vegan ? If it's not, is it pretty easy to substitute the ingredients ?

No, it's not vegan. You can use soy milk in place of dairy milk, and I use 1/4 cup soy milk in place of an egg or two.

It's not vegan, but a lot of the recipes are vegan and it's pretty easy to veganize some of the others. One really interesting thing about it is that it discusses the effects of soy on kneading -- apparently it can affect the gluten's development, so they actually use a different procedure for kneading breads with soy in them.

If you're not sure there are enough vegan recipes to justify buying it, I definitely suggest borrowing it from the library -- no sense ending up with a cookbook that isn't what you want :)

(Also, there's a really good vegan/whole wheat banana bread recipe -- well, one of the alternatives has honey, but the other doesn't -- in it. Definitely try that if you like banana bread.)

Kourtney I will check it out at the library to see if I like it. Thanks for that suggestion. I happen to love banana bread, can't wait to try out that recipe!
