Whole grain panini?

We have been eating a lot of panini sandwiches since I got my Cuisinart grill for xmas. It is so convenient, quick, and delicious. Actually, that grill has been used for almost everyday now for pancakes, Korean pancakes, Korean BBQ, etc. I am able to stick with my low fat or non-fat diet using this grill.

I have used white Italian artisan bread for the panini. I want to start using whole grain bread. Is this a non-Italian way or not considered a panini? Would it still be good? What kind of bread would you suggest?

It's not the italian way, but why not? If you can find a light-textured wholegrain bread, that would be best. Have you tried the organic sprouted grain loaf breads and buns? They are wholegrain, made from ground sprouted wheat. They are light and very good, not like the heavy Essene breads.

Thanks Bryanna! We have Ezekiel bread in our HFS. I will try that. Thanks.

I also found this brand of bread, Rudy's Organic, which is great but it is harder to find the whole grain. http://www.rudisbakery.com/
