For anyone with a nacho cheese craving, I found a recipe that's really good. My family fought over it last night. Yum!

Nacho Cheeseless Sauce
adapted from The Teen's Vegetarian Cookbook by Judy Krizmanic

1 12-ounce container silken tofu
1 10-ounce can drained Ro Tell (or other brand) tomatoes & chilies (or 1/2 cup bottled salsa)
1/4 tsp salt
1/4 tsp turmeric
2 Tablespoons nutritional yeast
1/4 cup water mixed with 1 tablespoon cornstarch
Smoked paprika or chipotle powder, to taste (optional)
Taco seasoning
Thinly sliced scallions

1. In a blender or food processor, blend tofu, salsa, salt, turmeric, nutritional yeast, a pinch of smoked paprika or chipotle powder, if using and water/cornstarch mixture.
2. Heat a non-stick skillet & spray with oil, coating bottom of pan. Pour in tofu mixture and cook on low heat for about 5 minutes, stirring as needed to get a creamy consistency. Add a little taco seasoning to taste. Scoop into a bowl, sprinkle with scallions and serve with chips.

Serves 4 to 6

This is also really good over a warm tortilla with beans.

Thanks Catherine. I think that it would also be good stirred into pasta for mac and cheese.
