I want to make your waffle recipe tomorrow morning (the one with the soaked soybeans). What would you recommend to sub for the bran? Could I use corn meal? Or half corn meal and half brown rice flour?

Do you have oat bran? That's what I always use.

You can just leave the bran out, too.

Thanks. Will it make a difference with the overall consistency by just omitting it all together without substituting something else for it?

If you're interested, Bob's Red Mill sells rice bran. I've used it in granola. Not sure how it would be in waffles . . . The consistency is pretty different than wheat bran. Catherine
