Bryanna,
I was looking up what an Iraqi Christmas menu would be and could only find this tiny paragraph:

"In Iraq, Christmas is known as the Little Feast. Easter being the Great Feast. Christians fast from December 1st until Christmas Eve, consuming no meat, eggs, cheese, or milk. After the Christmas Eve service, a great feast begins."

Do you know what would be a traditional, authentic Iraqi menu for Christmas, vegan?

I need to prepare some yummy Iraqi foods and would like them to be acceptable as well as pleasing.
I'm not familiar with the specifics of the foods of Iraq, only a general idea of "Middle Eastern" foods.

Thanks!
Bryanna

Linda, I have done some research on this and I will get back to you about it-- it will be a fun project! I have some ideas. Their food is sort of part-Persian, part-Arabic.

Yay! I was hoping you had done some research on this! You have a vast knowledge of ethnic foods, so I had my fingers crossed :)
I agree it will be fun. I love the foods from that region.
Thank you SO much!

Linda, there's the Iraqi Pomegranate Soup from Newsletter #5. There are some websites below it with recipes that either are veg or could be adapted.

Thanks! That does help alot. Whew, okay, might not be as hard as I thought...I see lots of stuff on those pages I might be able to do!

I also have been going through some of my cookbooks, and notice that Ken Bergeron has some recipes that might be good for salads -- I notice not a lot of leafy-salads on those sites! Do you have his "Professional Vegetarian Cooking" book? Here are a couple salads that look good:

Bryanna, how do these look to your eye for part of an Iraqi meal?

"GOLDEN POTATO SALAD WITH OLIVES AND APRICOTS"
Gold potatoes
imported green olives
apricots, dried
red onion
white wine vinegar
lime juice
prepared spicy brown mustard
salt
black pepper
ex-virg-olive oil
fresh basil
fresh parsley
Garnishes: basil, parsley; radicchio leaves; celery; sliced, toasted almonds; frisee; sumac
Mmmm, sounds yummy anyway!

-----------

"RUBY GRAPEFRUIT, POMEGRANATE AND ASSORTED GREENS"

ruby-red grapefruit
pomegranate
mesclun salad mix
"White Balsamic Miso Vinaigrette" (his recipe: spicy, brown mustard; white balsamic vinegar; white miso; black pepper; oive oil; apple juice; fresh tarragon)

---------

"SALAD ROUGE WITH GLAZED RED ONIONS AND TOASTED HAZELNUTS"
Red onion
olive oil
salt
pepper
red wine finegar
maple syrup
water
variety of red lettuces
"Fresh Herb Vinaigrette" (his recipe: veg stock; red wine vinegar; shallots; constarch; salt; fresh black pepper; spicy brown mustard; olive oil; maple syrup)
toasted hazelnuts

-

There is also this dish; but it's from Afghanistan:

"WINTER SQUASH AFGHANI STYLE"
onions
olive oil
gingerroot ---- (do they use ginger in authentic Iraqi recipes???)
garlic
coriander
cumin
cardamom
salt
black pepper
succanat
butternut squash
fresh tomatoes
currants
toasted sliced almonds
_Serve with Basmati Rice_
-----------

Funny how you can see a French influence in a lot of his recipes, lol.
