with peanut butter crust is in Vol 1 Issue #5 under South African Dinner menu. Don't omit the peanut butter crust and use store bought crust! This crust is great with the sweet potato pie.

Thanks, Debbie! No, I wouldn't omit the peanut butter; that combo of sweet potato and peanut butter is what sounds so yummy. I'm making the crust tonight. Did you have any leftover pastry? I like making little leaves with extra, but I'm not sure if there'll be enough; otherwise, I'll make a double crust.

Yes, if you want to make cut out leaves, you will need to make the double crust recipe. One crust recipe is barely enough to make the pleats around the edges (I have a bigger glass pie pan).
Also, I used 3.5 Tbsp of cornstarch to make it firmer. I did not bake the sweet potato until it is very soft. The sweet potato was cooked but firm. It is up to you how you like the texture of the pie.

Okay, thanks for letting me know, Debbie; I've always loved pie crusts! I'll see how my filling looks and add extra cornstarch if it looks thin.
