Thanksgiving menu and a question

My Thanksgiving menu is:
Bryanna's recipes: Squash stuffed with wild rice and chantrelle mushrooms 'Chicken' Pot Pie with Brioche Topping Pear-Cranberry Sauce Morrocan Spiced Roasted Sweet Potato Sweet Potato-Orange Pie with Peanut Butter Crust
My own recipe: Crunchy Salad
We didn't wait for Thanksgiving to eat the Sweet Potato Pie with Peanut Butter Crust. It is REALLY GOOD! We had a slice and planning to have another slice later. I like it better than the Pumpkin Pie.
Bryanna, a question: What kind of gravy is good with the Squash Stuffed with Wild Rice and Chantrelle Mushrooms? I have 'ham' gravy frozen. Or Maple-Spike gravy? What do you suggest?
P.S.: I finally bought Chantrelle mushrooms although it cost $19.99 per lb. where I am. I thought what the heck, it is for a holiday meal.

Hi Debbie! Your menu sounds great!! How many folks will you be serving? I wasn't even able to FIND Chantrelle mushrooms around here ... I wanted to use them in the Three Sisters Pizza.
I have Thanksgiving day off from work for the first time in ages (I'm a nurse). It will be just my husband and me, and my menu is:
Pomegranate-Glazed Soy and Seitan Roast - (A friend from work who moved here from Sudan
- knew EXACTLY what Pomegranate Molasses was,
- said she uses it all the time, and had several
- jars at home that she gave me!!)
Vegan Quiche (for wheat allergic hubbie) Lemony Roasted Potatoes and Peppers Salad of grated Carrots, Beets, Raisins Homemade Rolls
We aren't much of dessert type folks. Sometimes I make a pie for the holidays, but with just the two of us, I probably won't this year. Bryanna, that's why I really like this latest newsletter .... lots of entrees and other main dishes and not as many desserts.
Bryanna, a question from me ... this is the first time ever I'll be making seitan. Anything special I should know? Your directions sound perfectly clear, and from other forum members' posts here and on VegSource, it really sounds pretty straight forward. I'll be cooking it via "method #2" .... cooking them in 2 loaf pans. I use store bought seitan frequently, and am looking forward to seeing how homemade compares!

Debbie, that would be a good gravy to go with the squash, actually.
Brenda, I can't think of anything else to tell you about the seitan, so go for it!

It is actually for the two of us, too, my husband and I. We are taking these dishes to my sister's house who is 1.5 hours away to enjoy them with the rest of my family (another 6 people). That's why I picked the dish that are easily transported and can be reheated later.
My family are heavily meat eaters and don't like vegetarian dishes. Hopefully, they are willing to taste my dishes but they have to have their meat. My brother-in-law refused to eat any dish labeled 'vegetarian'. If they eat any of my dish that's great and if they don't we just bring them back home as leftover.

Brenda, You're going to love the homemade! I haven't purchased commercial seitan ever since I met Bryanna. Only things I've bought are fish faux meats from Asian markets. I had success first time I made seitan; the instructions are very thorough.

Yes ... I sorta figured I'm going to fall in love w/ homemade seitan. Since homemade ANYTHING is better than store bought, I am assuming the same is true w/ seitan! I'll let you know how it comes out!
Debbie, you've chosen some PERFECT dishes, IMO, to share at a meat eaters table!! I hope your dishes totally disappear due to everyone wanting some (with plenty for you and hubby first of course!!)
My family is all too far away to get to (Texas .. I'm in NC). And irony being what it is, they are all very vegan friendly. They LOVE my dishes, eat anything I fix for them. But they still consider vegan synonymous with "labor intensive" (even tho they see me whip up a vegan meal for everyone when I'm down there in no time at all!)
But considering their version of fixing supper is taking a prepared meal from the freezer and heating it in the microwave, maybe 30 minutes prep time IS labor intensive {grin} !!
