Giant Spiral variation, and figs...

Is there any way I could use figs as a filling for you giant Spiral Bread?
The issue is that I have fresh, frozen figs from the summer. They were not sweet enough to eat straight, but were still good and I couldn't bring myself to throw them away! I promised myself I would use them in recipes. I was thinking they would be great in the Giant spiral and even your Hamantaschen, but I need to know how to make the filling out of fresh-frozen figs instead of dried.

Also, if anyone has any ideas for these figs -- bars, fig newtons, etc. -- let me know; I have a ton in the freezer!

That sounds like a great idea! here is a recipe i found;

Fig Filling
1 lb. fresh figs, chopped
1/3 cup sugar
1/3 cup water
1 tablespoon lemon juice

Combine all ingredients in a medium saucepan; bring to a boil. Reduce heat to medium; cook 30 minutes or until thickened, stirring constantly.

Fresh Fig Filling

2 cups finely chopped figs
(or 2 cups uncooked prunes)
3/4 cup each: water and sugar
Fresh lemon juice (optional)
1/2 cup chopped nuts (optional)

In a large saucepan, combine figs, water, sugar and a squeeze of juice.

Cook over medium heat, stirring constantly, until mixture is thickened.

Remove from heat and stir in nuts. Set aside to cool. Makes about 3 cups filling.

Ooh, thanks, Bryanna, some of those recipes look great; there's even a Fig Newton recipe I'd like to try.

The filling came out *great*! Seeing how thick and yummy it came out, I just might add some to my cranberry sauce this year for a nice change!

Reading those recipes, I sort of combined them and here's what I did:

3/4 C water
3/4 C sugar
1 lb figs, chopped
1/8 tsp cardamon
1 TB lemon juice
1 1-inch piece of cinnamon stick

Bring water, sugar, lemon juice and cinnamon stick to a boil.
Add figs.
Bring back to boil; reduce heat and simmer 30 minutes, stirring often.

I'll post my finished Hungarian Spiral tomorrow; it's rising in the fridge now.

Well, it tasted yummy, but I've totally lost my touch for baking!
Believe it or not, this WAS a spiral!

It completely flattened out as it was supposed to rise; don't know what went wrong : (
this is one of two I made; the other came out basically the same.

Help!

Hi Linda,

That's interesting what happened to your spiral bread. Could it be that the filling is too thin and watery so the bread won't hold up?

About the figs idea, I once watched a cooking show and learned from this show to cook figs (fresh or drieD) in balsamic vinegar. You can add a bit of sugar too. Cook it for a while until soft and became saucy. Then, use this to top vanilla ice cream. I tried it and it was delicious.
I forgot the measurements now so don't ask me for a recipe. Lol!

Hi, Deb,

No, it was a thick filling, like jam! The dough was very delicate. I don't know why it spread like that. It looked great when I shaped it, but while it was supposed to be rising, it spread instead.

I'm giving up baking : ( I feel so discouraged for this holiday, I'll think I'll show up at your house on Thanksgiving! Lol! Just joking ;D
However, I'm not sure what to make now...I was thinking of making Bryanna's Timballo Di Polenta, but now I'm afraid I'll mess it up : /

I think I'll try that, Bryanna. The bread is SO good. It tastes like it came from a bakery. I love the fig filling, too, it came out tasty.
