Talking about foccacia, do you know what Ciabatta is? Is it different than any other bread? My husband asked me because of the commercial on TV of the latest promotion of Jack In the Box and other fast food burger chain that starting to sell Ciabatta sandwiches.
I told him that it is just a square bun... LOL! I also told him that it is supposed to be an artisan bread. Then, he asked me what's the meaning of 'Artisan Bread'. I told him that it is European style bread where the dough is risen slowly. I hope I am correct! :-)

I agree with your assessment that ciabatta = square bun. Artisanal is now unfortunately a marketing term with little or no actual meaning, but I think slow rising/hand made by someone who cares about the product is what is intended.

Ciabatta is made with a very wet dough and results in a nice chewy bread-- it's not the same in North America as it is in Italy, most of the time. There is an explanation and a recipe in Nonna's. ---------- "To look like a goddess, eat like a peasant." Karen Andres
