Hi There--
The CSA I belong to has rutabagas now. I was wondering if anyone had good ideas for rutabagas besides roasting or mashing. I was thinking about using them to make latkes.

My favorite way is to roast them with a little olive oil and rosemary, like potatoes. or you can add a bit of orange juice or maple syrup. They get sweet and delicious! ---------- "To look like a goddess, eat like a peasant." Karen Andres

I love them roughly mashed with carrots (roughly an equal amount of carrots and rutabagas), margarine, salt and pepper.

My local Community Supported Agriculture organization here in Madison, Wisconsin offers a great book focused on veggies--both singly and in groups--and what to do with them, including rutabagas and other lesser-known types. I recommend it. Here's a link with more info:
