Linda, I tried Julie's cupcakes

I made cupcakes from Julie's book '125 bestcupcake recipes'.
I made Pumpkin Cupcakes and Chocolate Raspberries Cupcakes. They are pretty easy to be veganized. I use flax seed glob to replace the eggs and soy milk.

I made Maple Buttercream frosting and Chocolate Fudge Frosting. I use Earth Balance instead of butter. I served them to Bunco ladies and they love them.

The Maple Buttercream was for the Pumpkin Cupcakes and the Chocolate Fudge was for the Chocolate Raspberies cupcakes. I sprinkled some cinnamon powder on the frosted Pumpkin cupcakes and add 1 raspberry on top of each Chocolate Raspberry cupcake for decorations. They were pretty cute and delicious!

Mmmmm,sounds yum.
I just saw Julie has a spot in Vegetarian Times this month; she did the "5 Ingredient Recipes" section.

Debbie, I'm so glad that you've enjoyed the cupcakes! Thanks for posting the results. Do you like the flax goop better than Energy Egg? Have you tried the egg replacer from Bob's Red Mill? I really like that one. I think it's better in cookies and cakes than Energy Egg.

Linda, glad you liked the article. I had actually done 6 recipes for that article (most of them vegan), but those were the ones that they chose. I also have an article coming out in December's Bon Appetit (on Christmas Cookies). But I don't think that any of them are vegan.

I have never tried the egg replacer from Bob's Red Mill. I just bought Energy's. It will take me a while to use it up. Maybe next time I will try Bob's. Flax seeds glob works great in the cupcakes. I used the golden flaxseeds for the pumpkin cupcakes.

I see why you mentioned in the recipe that the Chocolate Raspberry cupcakes are best eaten and frosted the same day. They became drier and more crumbly the next day. But they are still good.

I will try other recipes in this book next time. Those recipes are easy to be veganized since they only use 1 to 2 eggs.

Thanks for the feedback Debbie. When you make the flax goop, what is the ratio that you use? Do you grind the flax first and then blend it with water, or blend them both together?

I know what you mean about using up the Energy Egg. I actually bought the one from Bob's on a whim when I was there (at Bob's Red Mill). They had fresh baked hot cinnamon muffins they were sampling that used the egg replacer. Great marketing, because I quickly popped a bag into my cart :-)

Hi Julie,

I used Bryanna's flax seed goop. Click on the left tab under Meat, Dairy and Egg Subs. It is 1 Tbsp raw flax seeds + 1/4 cup water + 1/2 Tbsp Egg Replacer = 1 egg.

I just double it for 2 eggs. I used the hand blender, you know,the fancy Braun, it is my favorite tool now. I used the small cup to blend it until very frothy. Just follow Bryanna's instruction in her site. It does look like beaten eggs. Amazing!
