I just visited the vegetarian awakening site. Congratulations that you will be one of the speakers! Are you going to do some demo too? I admire those chefs. But Michigan is so far. :-)

You are GREAT so no need to worry! :-)
May I suggest a demo of seitan and soy 'ham' using a claypot if you have time? Or the 'pork roulade' cooked in claypot? I think that your soy and seitan invention is unique. After all, professional Circue Du Soleil French chefs learned it from you.
I don't know if you time though. If you don't have the time, you can cook one batch before the demo and just presented the final result like in TV cooking show.
I have never tasted seitan as good as yours and as easy to make. The claypot cooking adds a unique touch. :-)
Or the 'beef wellington'? I thought that was so good. It really makes our holiday meal very interesting and festive.
Or the Quick version 'Veal' or 'Pork' cutlets and make 'veal' marsala or 'veal' parmesan? I thought these were great dish too.

I have been thinking whether I should go to this conference just for fun and to learn something. I have to think about the cost and time. Meeting those chefs would be an experience!

Bryanna, how much time do they give you? One, two hours? Will you be demonstrating one day only?
Debbie, what is this about Cirque du soleil? They make seitan?? I would love to meet Bryanna! I think it would be a pleasure to meet Ken Bergeron too! He has incredible recipes. One of the first things I noticed when I bought his book is he mentions Bryanna in it ;)

I had a side conversation with Bryanna regarding a chef from Cirque Du Soleil that took Bryanna's cooking vacation a few months ago.
A few of the performers are vegetarian or vegan so the French Chefs need to provide meals for them. One of the chefs took Bryanna's class and was taught to make seitans.

Thanks, everyone! I don't know how long I have, but I know that Kevin Dunn, the organizer, liked my seitan, too. I hope that i will have time to make it-- the Wellington is a good idea!
