I just returned from a visit with my sister. Her ten-year-old son told us that he liked to pickle vegetables. Impressed and intrigued, I asked him how he did it. This is what he told me:
Buy a jar of pickles. Eat the pickles. Add a handful of green beans from the garden to the jar of leftover pickle juice. Put the jar in the refrigerator. In about a month, you'll have pickled green beans.
Expecting more of an actual "recipe," I thought this was very funny, but I tried not to laugh . . . Catherine

Lol! That's too funny, cv! I never thought to use pickle juice -- that's cute! I think the actual recipe is pretty easy, though. It's basically packing veggies like cabbage and carrots in vinegar and pressing it down with a weight (if you even have to do that) and letting it sit. Then add garlic and salt. I've never done it, but I remember eating cucumbers dipped in vinegar, salt, and lots of black pepper! What a weird kid! ;D I really like vinegar flavors; I think there's a name for that type of person...perhaps it's in the principles of Ayurveda.

He's right-- pickle juice is great for storing carrot sticks for snacks-- a little tang! ---------- "To look like a goddess, eat like a peasant." Karen Andres
