Bryanna, I love that you created a method for smoking tofu, since I've never bought any because I've never found any!
I mentioned in the post below that I use a Numi brand smoked tea occasionally in the cooking broth for seitan; but I'm wondering now if using your smoking technique would work on your cooked seitans? I would love a smoked version of your pork! Do you think that would work? It would, I'm sure, taste much different from a seitan that was cooked in the smoky tea broth...
Have you ever smoked your seitan this way? I mean seitan that has already been cooked and then smoked using the same method as the tofu.

This is actually a Chinese method of smoking-- it's just the brine and the particular mixture of ingredients for the smoking mixture that are my version.
Yes, I think you could smoke my seitans this way-- how about the "ham'!!! I will try this soon! And, i haven't forgotten about my cheeses-- will try with the carageenan tomorrow. ---------- "To look like a goddess, eat like a peasant." Karen Andres
