Hi Bryanna,
I am going to smoke tofu tonight (now they are in the brine). I love smoke tofu. I have some questions:
1) I have loose Java Tea (from my home island). I think it is black tea. Do I have to use oolong or that will do, use what I have?
2) After the tofu is smoked, can I reuse the smoking mixture or should it be thrown away?
3) I have brown jasmine rice. That will do, right?

I have some questions too Bryanna. My mom gave me an electric outdoor smoker, and I would love to smoke tofu on it. I don't think that I can do your indoor smoking techniques on it, so I'm wondering if you have any suggestions for this other smoker?
Oh, and I absolutely love your latest newsletter (as I do all of them)!. Thanks for all of the great recipes!

Debbie, you can use any black tea. You won't be able to use the smoking mixture again-- it will be all glued together and sort of burnt.
Julie, you can just use the directions for smoking with your smoker, using wood chips or whatever, but for the same amount of time. ---------- "To look like a goddess, eat like a peasant." Karen Andres

After seeing the newsletter the other day, I was going to post about this tea! First, I *LOVE* this brand of teas and teasans. I think I may have mentioned them here; but I know for sure I told bryanna about them a few years ago when I suggested she try "Bushmen's Brew" when we were discussing Rooibos in a thread. If you like/love Rooibos, you'll like/love Bushmen's Brew!
The brand is "Numi" and it is excellent; and their Rooibos is great. As well, they have a new Rooibos, which is a Green Rooibos! It's even more nutritious, supposedly, than the Red. I love it; it's good.
SO to get to the point (finally :D), which is smoky tea, I tried this one from Numi a few years ago. I thought it was horrible drinking tea! Smoked tea is obviously an acquired taste, of which I haven't acquired, Lol! So, being that I cannot stand to waste things, I decided to try it in my seitan broths. Yum! It's been my secret little addition to the beefy seitans :D! Only thing is this is VERY strong tea; it's VERY smoky! I only use one bag for the broth and it's plenty. So, if you try it, please be careful and taste it before you use it for the seitan; I'd hate someone to ruin their seitan on my suggestions! I've used it for various marinades, including tofu recipes.
Anyway, this is the tea I was planning on using for this recipe. It's called, NUMI TEA, SMOKY TARRY LAPSANG SOUCHONG, and it's available at Whole Foods, Wild Oates, and I've even seen it at lots of supermarkets.

oh, you'll have to click on "teas and teasans" highlighted in green on the top left corner
Then click "Tea Boxes" and scroll down;it's the last one.
You'll fine the "Honeybush, Bushmen's Brew" under "Herbal Teasan Boxes" Yummy! Tastes like it has honey in it!

Thanks so much for the info about tea. I have seen Numi tea boxes in the market.
Do you know if their tea bags are bleached or not? I searched and found out that their teabags are natural filter paper. So I guess it is not bleached I assume. I heard that drinking tea in bleached tea bags are not healthy. I bought Mighty Tea because the tea is bagged in a silky cloth bag. www.mightytea.com

Well, now I go into anxiety mode :D. Maybe if you can find a sample pack it would be better than buying a whole box of the smoked? I just worry so much when I recommend something that *I* like for fear people waste their money or time on something I recommend!
Oh, you know, if you order by phone, you can request free samples :). I've done that before.
Remember the tea is very strong and very smoky! And, to me, it's horrible to drink! But I love it in my broths and marinades.
Only thing I never stress about is recommending a Bryanna recipe, lol.

Don't worry. I meant thanks for pointing out Numi tea website. It seems that it is a good brand and not that expensive.
About the smoky tea Lapsang Souchong. I think I have tried this and bought it from a Chinese market. I think I didn't like it. But that's for drinking, maybe it is different for smoking tofu. A good idea to ask for samples, though.
I am interested to buy the organic green tea in Numi, not the smoky ones. My husband and I have been looking for green tea products that are organic and don't use bleached bags. We were recommended to use loose tea but we found that it is inconvenient and still like the bags.

Bryanna,
You say to use a large spun-steel wok for smoking tofu. I have found a Kitchenaid hard anodized 11" stir fry. Will that work?
Thanks Linda for the link to the Numi tea website. I will order. And, thanks for the tip about using the tea bags. I will try your suggestions - sounds good.

Shirley-- I think that is too good of a pan to use for smoking. the foil protects it somewhat, but I would suggest going to a thrift store or Chinese store and getting a spun-steel wok just for smoking. ---------- "To look like a goddess, eat like a peasant." Karen Andres

The stir fry pan is on sale for $19.95 so I could use it just for smoking tofu. Is 11 inches large enough? I have a 12 inch non stick that I use for most things.

For that price, you are right-- the foil does protect it somewhat. The size just depends on your lid (it must be tight) and the size of the rack or steamer insert. ---------- "To look like a goddess, eat like a peasant." Karen Andres
