The other day, when 4 of our grandaughters were visiting, I made some wraps using Vietnamese salad roll filling (lettuce; grated carrots with a bit of sugar and rice vinegar; Breast of Tofu crispy slices, slivered; fresh basil; green onions; slivered raw zucchini [didn't have any cucumber]; cold cooked rice vermicelli); sliced crenshaw melon), but I used wholewheat tortilla wraps instead ofthe rice paper rounds to make them more substantial and easier for me. We had homemade plum sauce and peanut sauce for dippers. It was a hit!
You could use smoked, or commercial baked or marinated tofu or tempeh instead of the breast of tofu; mango or cantaloupe instead of the crenshaw melon; cilantro or mint instead of the basil; cucumber instead of the zucchini; or whatever else you can think of. ---------- "To look like a goddess, eat like a peasant."
