for bushels of ripe tomatoes! Bryanna, if I dried some tomatoes, can I store them at room temperature or should they be frozen or refrigerated for long storage?
I'm worried they will not be thoroughly dry, making them unsafe...

Homemade dried tomatoes are delicious! You can dry them quite crisp-- then you don't have to worry about them going bad. They can then be rehydrated a bit and marinated, or whatever. Oh, yes, great page! It gives directions for various ways to dry. Hopefully, mine will keep at room temp. That site says it will last longer in the fridge or freezer, but I don't have the room.

Ooh, great suggestion for this time of year! Quick and easy too. I love raw sauces on pasta dishes and pizza too. It doesn't call for sun-dried tomatoes, but adding a few might be a good thing to try as well!
