How was the Vegan Cooking Class?

How was the cooking class? Please tell me everything about it! :-) I wish I was there....

Hi, Debbie! I've been meaning to write to you about this! I didn't do the big cooking vacation this year, because it just did not work out for everyone who wanted to come. Instead, I have been doing some 2-day private classes. This may be a trend! (See my cooking class page.)

I did a class for a professional chef for the Cirque du Soleil(and her mother). This lady is a French and Italian-trained chef who cooks for 200 performers every day (with 5 other French chefs, and sometimes their families, too. They are from all over the world, with all sorts of dietary needs. She wanted to learn some vegan cooking, particularly seitan making.

I have another mother and daughter coming from Vancouver next week, and some ladies who want to learn vegan Italian Jewish cooking in October.

The advantage to the private or small group classes are; they are cheaper for the students; it is less stress for me because I don't have to feed 12-18 people every night (!); the students get more one-on-one and hands-on experience; we can cover just about as much in 2 days as four with a small group; students can request the type of class they want; we can do it any time of the year on a Sat/Sun, or a Weds/Thurs.

This is how I'm doing it: I tailor the classes to the tastes and needs of the students; the students come for 2 days (at least, for the class-- they may want to stay on Denman longer) and stay at a nearby B&B. We start at 9 am and have a morning class; break for a big, leisurely lunch; then have an afternoon class and a gourmet dinner with vegan wine in the evening. We can do it in my kitchen for 2-3 people; or in a larger kitchen if we have more.

I'm charging $300 Cnd per person, which includes lunch, dinner and vegan wine (and all the handouts, of course).

Hi Bryanna,

Oh, I see. I didn't know that you changed your plans. I thought that you had the cooking class last week.

Smaller classes are great too and they are good for you if you have less stress.

I will spread the word about the classes.

I will think about it for next year. July is also not good for me since I have new duties at work. If I come next time I will pick the time when you have those Chantrelle mushrooms. :-) When is that, October, right?

Mitchell laughed at me when I told him that I only want to come to Denman Island when there are Chantrelle mushrooms. Well, they are $20 a lb. in my area. So we have never tasted them. I bet they are delicious. You can plan a Chantrelle Vegan cooking class next year. :-)

Yes, maybe some of the Cirque Du Soleil performers are vegans or vegetarians. Cool that you taught a professional chef how to make seitan.

The chantrelles can be any time between August and december! Actually, some people were picking tem a few weeks ago because it was wet! But, generally, October would be good.
