I have a craving for Jamaican patties for some reason, so I was thinking I could make my own. Do any of you have a recipe? I think I'd prefer a beef-style recipe using TVP or ground seitan or something, rather than the mixed vegetables vegetable jamaican patties usually contain.

BRYANNA'S VEGETARIAN JAMAICAN "PATTIES" (SAVORY STUFFED PASTRIES) Adapted from my book "The Almost No-Fat Holiday Cookbook".
Makes 36 to 49

Spicy stuffed pastries with a rich curried pastry crust are sold by street vendors all over Jamaica. Filo/phyllo pastry makes a crispy, low-fat stand-in for the pastry.

9 full sheets filo/phyllo pastry
oil from a pump sprayer or melted Earth Balance
FILLING:
2 large onions, minced
1 and 1/2 c. dry textured soy protein (TVP) granules, reconstituted in 1 cup PLUS 2 T. boiling water with 2 T. soy sauce (OR use 1 package Yves veggie "Ground round" or something similar)
1 large tomato, chopped
1/2 c. green onions, minced
2 T. chopped pickled jalapeƱo peppers (or Scotch bonnet pepper)
2 T. lemon juice or dry sherry
2 cloves garlic, minced
2 tsp. curry powder
1 tsp. salt
1/2 tsp. dried thyme
1/4 tsp. ground allspice

To make the Filling, steam-fry the onions, garlic and jalapeƱos in a large, heavy nonstick or lightly-greased skillet until the onion is limp (if you don't mind a little fat, you can saute in a little olive oil; otherwise, stir-fry at high heat, adding a little water as necessary to prevent sticking).

Add the green onions and tomato. Steam-fry or saute until most of the liquid has evaporated. Add the salt, thyme and spices and stir-fry for a minute. Add the reconstituted TVP and the lemon juice or sherry, mix well and allow to cool.
To fill the "patties", stack 3 sheets of filo together, spraying each sheet with oil from a pump sprayer or brushing with a little melted Earth Balance, and cut into 6x5" rectangles. Repeat with the remaining filo. Keep the filo well-covered with plastic wrap while you work.

For each "pattie", place about 3 T. of the Filling in one corner of a rectangle of filo. Roll the filled end toward the center, then fold in the left and right corners like an envelope, then roll up again. Cover the filled "patties" with plastic wrap while you fill the rest.
