Someone just gave us a couple handfuls of morel mushrooms and I'm wondering what to do with them. I was told to saute in butter and flour. I suppose I could use earth balance but does anyone have suggestions for a non-wheat flour that would work well with this? Or any other morel recipes? Thanks! Catherine

I love sauteed mushrooms, but I've never heard of adding flour to them. Sometimes I add a bit of garlic or shallots, but that's it. I'm sure earth balance will be fine.

Yes, I'm very lucky indeed. That's why I don't know what to do with them--I think I've had them only once or twice before and can't remember how they were prepared!

oh, and it turns out the recipe with the flour calls for a bit of egg as well . . . any suggestions? thanks! catherine

Mix some milk with an egg. Soak the mushrooms in it. Drain off the excess liquid. Then, sprinkle the mushrooms LIGHTLY with flour, cook (pan-fry or oven- bake - either one, and enjoy!

It sounds like the eggs are to bind the flour to the mushrooms, but I'm puzzled as to why you'd soak the morels in egg and milk. I've heard of soaking things like onions or strong-tasting meats in milk to make the flavour more mild, but I can't imagine why you'd buy morels only to soak the flavour out.
I'm stumped.
