Got any good chili ideas?

I am planning on making some chili next week and I was wondering if any of you put anything different in your chili when you make it. I am particularly interested in different veggies that you might add. Here is a list of what I am putting in my chili and if you have any other suggestions, that would be great! (does anyone ever put potatoes in their chili?)

Garlic
Onions
Carrrots
Celery
Peppers
Tomatoes
Beans (black, kidney, small white)
TVP
maybe some tofu
spices and seasoning

I like to add bell peppers, corn kernels, and zucchini or other summer squash.

If there's a latin or mexican market near you, some interesting chiles such as pasilla, chipotle, guajillo, etc. can add a new dimension to your chili. If the chiles are dried, pull off the stems, dump out most of the seeds and soak them in hot water for 1/2 hour or so. Then puree them in a food processor before adding to your chili. If you get chipotles in adobo (canned), just chop them (wear gloves!)

Also, a handful of chopped fresh cilantro or a tablespoon of unsweetened cocoa powder (seriously!) is a nice addition.

Yes, I always add cocoa to my chile. Gives it alot of depth.

Cocoa? I never heard of that before! But it sounds interesting so I am going to have to try that. The idea with the peppers sounds great too. Corn, yes, I forgot to put that on my list. I do usually add corn - thanks for reminding me! Squash sounds like a nice addition for chili especially in the summertime - another great idea.

Have you tried my quick chile recipe? I think it's from my soyfoods cookbook:

BRYANNA'S CHILE EXPRESS serves 6-8

This is better than any canned chile you can buy! I like pinto beans in my chile, but you can substitute black, kidney, small reds, pinks, or any other favorite of your own.

If you prefer to use ground seitan or crumbled frozen tofu (use 2 c. in either case) in place of the textured vegetable protein, reduce the water in the recipe to @1 and 1/2 c..

Leftovers freeze well.

6 cloves garlic, minced or crushed
3 T. chile powder
1 T. dried oregano
1/2 T. dried cumin
1/2 tsp. dried red chile flakes
a 28 oz. can diced tomatoes and juice
3 cans (or 4 and 1/2 c. cooked) pinto beans, drained
3 c. hot water
1 and 1/2 c. DRY textured vegetable protein granules (TVP)
1/4 c. soy sauce
1 T. EACH liquid hot pepper sauce, onion powder, and unsweetened cocoa (yes, this is an authentic ingredient!)
1 tsp. sugar or alternate
OPTIONAL: 1 green pepper, seeded and diced
1 c. corn kernels
1 or 2 c. diced zucchini or other summer squash
2 T. cornmeal
1/2 tsp. salt, or to taste

(If you are serving this with rice, put a pot of long grain rice on to cook before starting the recipe.)

In a large nonstick or lightly-greased pot, steam-fry the garlic for 2 minutes. Add the chile powder, oregano, cumin, and chile flakes and stir-fry for a minute. Add the tomatoes, beans, hot water, vegetable protein, soy sauce, hot pepper sauce, onion powder, cocoa, sugar (and any optionals). Bring to a boil, then turn down to a simmer, cover and cook @15 minutes. During the last 5 minutes, sprinkle the cornmeal over the top and stir in. Taste for salt.

Serve with rice, crusty bread, tortillas, soft fresh Polenta, corn muffins, or cornbread, and a salad.

Thanks for the recipe Bryanna! It looks really good. I am going to have to make that next time as I didn't have all the ingredients and would want to follow the recipe as is. I made my chili earlier and it was so weird to add cocoa to it!! It started smelling like chocolate! That was so funny! I never added oregano to my chile either, but when I saw it was in your recipe, I decided to add it. The way I make my chili, I could just about add anything!
